My name is Karen. Now that my very grown up children have flown the nest and are cooking for themselves, I want them to be able to access very quick healthy meals with very simple ingredients they would have in the fridge.

I am not very good at following recipes myself as I prefer to shop on a what looks good basis. I therefore make up my own recipes with what I have available on that day.
